Good Friends, Good Food, Good Fun




We had lots of laughs yesterday, just sitting around talking and eating. I need to post a few recipes that were requested by some. That's Keith the carving instructor in the dark blue shirt.

Beer Dip

2 -8oz. cream cheese( I use the 1/3 less fat)

1 - 8 oz. bag of shredded cheddar

1/2 cup beer

1/2 packet dry ranch dressing

Mix all together well and serve with pretzels. I just made 1/2 recipe yesterday.

Corn and Jicama Salad

5 ears of fresh corn cut off the cob

1 Cup diced jicama

1/2 Cup diced red onion

1/2 Cup diced red bell pepper

1 TBS chopped cilantro

1 Lime

Vegetable oil

Salt & pepper to taste

Juice one large lime or 2 small ones and stir in enough oil to equal 1/2 cup. Mix all together.

Oh and the brand of the mini corn dogs is Foster Farms. I bought them at Jewel from the frozen food section. Ruth loved them!
